Chicken Salad

Ingredients

  • 200 g mixed salad (e.g., oak leaf, frisée, head lettuce)
  • 100 g raisins
  • 20 ml cognac
  • 50 g Pine nuts
  • 4 chicken breast fillets
  • 2 tbsp sunflower oil
  • 150 ml white wine
  • 0.5 tsp paprika powder
  • 1 tbsp coarse mustard
  • 1 tbsp honey
  • 4 tbsp grape seed oil
  • 2 tbsp Apple cider vinegar
  • 2 tbsp white wine vinegar
  • Salt
  • Cayenne pepper

Instructions

    Wash, trim, dry and tear salad into small pieces.

    Soak raisins in cognac for about 10 minutes.

    Wash chicken breasts, pat dry. Season with salt and cook slowly in not-too-hot oil, turning occasionally, for about 4-5 minutes. Remove and let rest briefly.

    For the dressing combine paprika powder, mustard, honey, oils and vinegars and season with salt and cayenne pepper.

    Toss salad with raisins and pine nuts and spread on a bowl. Slice chicken breasts into strips and arrange over the salad. Drizzle some dressing over it and serve the remainder in small bowls.
