Ingredients

  • 500 g chicken breast fillet
  • 1 onion
  • 1 egg
  • 4 slices of day‑old toast bread
  • 50 ml heavy cream
  • 0.25 bunch fresh mint
  • Salt
  • Pepper
  • paprika powder (sweet)
  • 3 tbsp clarified butter
  • 4 iceberg lettuce leaves
  • 1 bunch fresh mint
  • 2 untreated limes

    Peel the onions for the patties. Dice the day‑old toast bread and soak it in the cream. Wash, dry, and finely chop the mint. Rinse the chicken meat, pat dry, and feed through a chilled meat grinder. Mix onion, mint, soaked toast, egg, ground meat, and spices thoroughly in a bowl.

    Shape 12 patties from the mixture and fry them in hot clarified butter for 8 minutes on each side. Wash limes under running water and cut into wedges. Garnish with iceberg lettuce, fresh mint, and lime wedges.
