Ground Meat Loaf with Goat Cheese and Bell Peppers

Ingredients
- 1 onion
- 1 yellow bell pepper
- 1 red bell pepper
- 1 day-old roll
- 2 Garlic cloves
- 1 tsp lovage (finely chopped)
- 200 g Goat cheese
- 500 g mixed ground meat
- 2 Eggs
- olive oil
- Salt
- Pepper
- 300 ml roasting stock
- 2 Garlic cloves
- 1 chili pepper
- 0.5 red bell pepper
- lovage (for garnish)
- 50 ml red wine
- 1 tbsp sauce thickener

Soak the roll in lukewarm water. Peel and halve the onion, dice finely, sauté with lovage in 1 tsp oil, set aside. Wash, trim, halve, deseed, remove white skin from bell peppers, dice small. Peel garlic, mince finely. Dice goat cheese. Squeeze out excess liquid from roll, mix with goat cheese, diced peppers, onion mixture, garlic and ground meat.

Beat eggs, salt and pepper into the mixture, taste. Shape into a loaf, place in an oven-safe baking dish greased with oil, brush surface with oil, bake at 220°C for about 50 minutes. After half the cooking time add remaining diced peppers and thinly sliced garlic cloves, pour in stock. Dice chili pepper after washing, cutting lengthwise, removing seeds and white lining, dice finely, add as well.

Finish baking the loaf, remove from pan, arrange on a plate, keep warm at 80°C in oven. Deglaze pan with wine, add water if needed. Whisk in sauce thickener, bring to boil, season with salt and pepper. Pour sauce over loaf, cut slices, garnish with lovage, serve.
