Ingredients

  • 1 whole chicken (approx. 1.4 kg)
  • 2 bunches spring onions
  • 125 g mushrooms
  • 2 tbsp butter
  • 200 ml white wine
  • 1 bunch parsley
  • 100 ml double cream
  • Salt
  • Pepper (freshly ground)

Instructions

    Cut the chicken into eight pieces. Clean and wash the spring onions, cutting the white and light green parts into rings. Clean the mushrooms; leave small ones whole and quarter larger ones. Melt the butter in a pot.

    Brown the chicken pieces, spring onions, and mushrooms in the melted butter. Deglaze with wine, cover, and simmer over low heat for about 40 minutes. Stir in the double cream. Season with salt and pepper, then sprinkle parsley before serving.
