Chicken Breast with Oranges and Lettuce

Ingredients
- 4 chicken breast fillets (about 140 g each)
- Salt
- black pepper (freshly ground)
- 1 Tbsp clarified butter
- 1 head of lettuce
- 0.5 cucumber
- 2 oranges
- 1 tsp Mustard
- 4 tbsp olive oil
- 1 tbsp freshly chopped parsley

Preheat the oven to 180°C with fan and top heat.

Season the chicken breast fillets with salt and pepper, then sear them in hot clarified butter in an ovenproof pan on one side; flip and bake in the preheated oven for about 10 minutes until cooked through.

Wash, trim, rinse, and dry the lettuce, then tear into bite-sized pieces. Slice the cucumber lengthwise and cut crosswise into rounds. Peel the oranges with a sharp knife, removing the white pith. Cut fruit segments from the separating membranes and catch the released orange juice. Squeeze the remaining orange pulp for extra juice. Whisk mustard, vinegar, captured orange juice, salt, pepper, and olive oil into a dressing.

Slice the cooked chicken breast diagonally into thin strips.
