Chicken Breast

Ingredients
- 4 chicken breast fillets
- 1 Lime
- white pepper freshly ground
- 1 Garlic clove
- 1 bunch Basil
- 150 g processed cheese
- 1 small egg
- Salt
- 6 tbsp breadcrumbs
- 1 Tbsp clarified butter
- 200 g Sugar snap peas
- 200 g mushrooms
- 1 tsp butter

Rinse the fillets, pat dry and cut a deep pocket on each side. Rinse lime under hot water, dry and trim some zest. Squeeze lime juice. Season juice with pepper.

Peel garlic and slice into rounds. Pull half of basil leaves from stems. Place fillets in a bowl. Drizzle with lime juice. Distribute basil leaves and garlic over them. Cover and let marinate for about 2 hours.

Slice remaining basil finely. Mix cheese with a fork to create a filling. Drain fillets. Stuff with the cheese mixture. Beat egg in a shallow dish with a fork. Season fillets, first dip in beaten egg then coat evenly with breadcrumbs. Heat clarified butter in a large pan. Cook chicken fillets over medium heat for about 10 minutes on each side until golden brown.

Clean sugar snap peas and mushrooms. Blanch peas in lightly salted water for about 4 minutes until just tender, drain and set aside. Melt butter in a skillet. Sauté mushrooms. Add peas. Season with salt and pepper. Plate chicken fillets with the vegetables. Sprinkle remaining lime zest on top. Serve with band noodles.
