Ingredients

  • 4 chicken breast fillets (skinless, possibly with wing bones)
  • 1 tbsp honey
  • 1 untreated lemon (finest zest strips and juice)
  • Cayenne pepper
  • 1 garlic clove (pressed)
  • 1 tbsp Olive Oil
  • 1 shallot (chopped)

  • 2 red chilies (deveined and chopped)
  • 1 untreated lime (finest zest strips and juice)
  • 2 ripe mangos (peeled and diced)
  • 1 tbsp honey
  • 2 tbsp fresh coriander (chopped)
  • Salt
  • ground pepper

Instructions

    Mix honey, lemon zest, lemon juice, cayenne pepper, and garlic; marinate the fillets for about 20 minutes.

    Preheat the oven to 200°C (Gas 6).

    Place the marinated chicken breast fillets on a baking tray and bake in the oven for about 15 minutes until golden brown.

    Meanwhile, sauté shallot and garlic in hot olive oil until translucent; add chilies, lime zest, and lime juice and cook for about 5 minutes. Add mango, honey, and coriander, stir, and simmer for another 2–3 minutes; season with salt and pepper.
