Ingredients
- 2 chicken breast fillets
- Salt
- Pepper (freshly ground)
- 1 Mango
- 1 red chili pepper (chopped)
- 1 tbsp honey
- 2 tbsp Soy sauce
- 1 tsp ginger (freshly grated)
- 2 tbsp oil
- mixed salad leaves (e.g., arugula or frisée)
Instructions

Wash and pat dry the chicken breast fillets.

Mix honey, soy sauce, chili, and ginger; coat the chicken with this mixture.

Peel the mango, remove the pit, dice it, and place both the fruit and chicken in a baking dish or roasting tray. Drizzle with a little oil and grill on the broiler at 180°C for about 8 minutes. Flip the mango and chicken and grill another 8 minutes.

Wash, rinse, dry, tear into small pieces, and arrange the salad leaves on plates or bowls. Place the grilled chicken fillet with mango on top and serve.
