Ingredients

  • 500 g chicken breast fillet
  • 0.5 bunch spring onions
  • 1 Garlic clove
  • 20 g Ginger
  • 200 g kidney beans
  • Salt
  • 1 Mango
  • 1 tbsp soy oil
  • Pepper

  • 100 ml Vegetable broth
  • 100 ml coconut milk
  • cilantro leaves

Instructions

    Rinse the chicken under cold water, pat dry and cut into 2 cm cubes. Wash and trim the spring onions; finely chop the white parts and slice the green parts into rings. Peel and finely mince the garlic and ginger. Rinse and trim the kidney beans, blanch in boiling salted water for 4 minutes, shock in ice water and drain before cutting into pieces.

    Dice the mango after removing the pit and peel it. Sauté the garlic and ginger in oil, add the chicken and brown it, then add the beans and spring onions, stirring for about 2 minutes. Season with salt, pepper, sprinkle curry powder, deglaze with broth and coconut milk. Fold in the mango pieces and simmer covered for 2–3 minutes. Taste and serve on preheated plates, garnished with cilantro.
