Ingredients
- 1 chicken
- Salt
- Pepper (freshly ground)
- 400 g pearl onions
- 60 g bacon strips
- 1 tbsp butter
- 1 tbsp Olive Oil
- 1 Garlic clove
- 200 ml red wine (e.g., Burgundy)
- 200 ml poultry stock
- 2 Bay leaves
- 1 thyme sprig
- 2 sage leaves
- 1 rosemary sprig
- 150 g small mushrooms

Wash, pat dry, cut into pieces, season with salt and pepper.

Heat butter and olive oil in a Dutch oven or pot, brown the chicken pieces and bacon all over. Remove the chicken and set aside. Add pearl onions to the pot, peel and crush garlic, sauté briefly. Pour in wine and some poultry stock, add herbs and return the chicken; cover and bake at 200°C for about 30 minutes.

Add cleaned mushrooms, continue baking uncovered for another 8-10 minutes until cooked through. Season with salt and pepper, serve with tagliatelle if desired.
