Chicken Couscous with Avocado

Ingredients

  • 1 Red Onion
  • 2 tbsp olive oil
  • 300 g Couscous
  • 600 ml vegetable broth (hot)
  • 480 g chicken breast fillet (4 fillets)
  • Salt
  • Pepper
  • parsley
  • 1 red chili pepper
  • 2 Avocados
  • 50 g black olives
  • 1 tbsp Lemon Juice

Instructions

    Peel and finely dice the onion. Heat 1 tbsp oil in a pot and sauté the onion over medium heat for 2–3 minutes. Add couscous, deglaze with hot broth, cover and simmer on low for 10 minutes.

    Meanwhile rinse chicken fillets under cold water, pat dry and season with salt and pepper. Heat remaining oil in a grill pan. Cook the fillets over high heat for 6–8 minutes per side until cooked through.

    Wash parsley, shake off excess moisture and chop except for a few leaves. Wash chili pepper, pat dry and slice into rings. Peel avocados, halve, pit and cut flesh into pieces.

    Mix avocado pieces, olives and chopped parsley with couscous; season with lemon juice, salt and pepper. Divide onto 4 plates.

    Slice chicken fillets and arrange on the couscous. Garnish with chili rings and remaining parsley.
