Grilled Pizza

Ingredients

  • 0.5 cube fresh yeast (21 g)
  • 400 g flour
  • Salt
  • 80 ml olive oil
  • flour (for working)
  • 2 balls mozzarella (125 g each)
  • 4 tomatoes
  • 2 Garlic cloves
  • chili flakes
  • 1 handful basil

Instructions

    For the dough, mix the yeast with about 200 ml lukewarm water. Combine the flour with 1 tsp salt, place in a bowl, create a well in the center and pour in the yeast mixture and 50 ml oil. Knead into a smooth dough by hand or using an electric mixer’s dough hook. Turn onto a floured surface and knead vigorously; return to the bowl, cover, and let rise in a warm spot for about 1 hour.

    Drain the mozzarella well and slice it. Wash the tomatoes, cut off the stem ends, and slice them. Peel the garlic, finely chop, and mix with the remaining oil and chili flakes to taste. Rinse the basil, shake dry, pluck leaves, and roughly chop.

    Knead the dough again, divide into 4 equal portions, and roll each into a thin pizza (≈22 cm diameter). Brush with garlic-chili oil, top with tomatoes and mozzarella, season with salt, drizzle remaining oil, sprinkle basil, and place on a hot grill grate. Close the lid and grill for 8–10 minutes until the crust is crisp and cheese melted. Remove from the grill and serve. Depending on grill size, bake pizzas one at a time or several together.
