Chicken Chickpea Tajine

Ingredients
- 800 g chicken breast fillet
- 2 onions
- 1 cm fresh ginger
- 2 Garlic cloves
- 1 large zucchini
- 400 g chickpeas (canned)
- 2 tbsp ghee (or olive oil)
- 1 tsp turmeric
- 1 pinch saffron
- 1 tbsp paprika powder
- Salt
- Cayenne pepper
- 0.5 tsp ground cumin
- 400 g diced tomatoes (canned)
- 300 ml chicken broth
- 2 handfuls fresh coriander leaves
- 50 g sour cream

Wash the meat, pat dry and cut into about 7 cm pieces. Peel and dice the onions, ginger, and garlic. Wash the zucchini, trim ends, halve and slice into 2 cm thick rounds. Drain the chickpeas in a sieve.

Brown the meat in hot ghee in a tajine. Add onion, garlic, zucchini, ginger and spices; sauté briefly, then pour in tomatoes and broth. Add chickpeas and simmer on medium heat with lid closed for about 15 minutes until thickened. Adjust liquid as needed.

Wash coriander, pluck leaves, and garnish the finished chicken tajine. Serve with a dollop of sour cream.
