Ingredients
- 4 chicken breast fillets (about 160 g each)
- Salt
- black pepper (freshly ground)
- 2 tbsp flour
- 2 tbsp clarified butter
- 150 g Gorgonzola cheese
- 100 g crème fraîche
- 1 egg yolk
- 2 tbsp lemon juice
- 2 tsp chopped rosemary needles
- 1 lemon (thin slices)
- beans (200 g green and yellow each)

Preheat the oven to 180°C. Season chicken breast fillets with salt and pepper, dust them with flour, and quickly sear all sides in clarified butter until golden.

Blend cheese with crème fraîche, egg yolk, lemon juice, salt, and pepper; stir in rosemary. Place chicken in a greased baking dish, spread the cheese cream over each piece, bake for about 10 minutes, add lemon slices after 5 minutes, then continue baking until done.

Wash and trim beans, boil them in heavily salted water for about 10 minutes, drain, and serve alongside the chicken fillets.
