Ingredients

  • 4 chicken cutlets
  • 1 egg
  • 2 tbsp flour
  • 6 tbsp breadcrumbs (more if needed)
  • 4 sunflower seed buns
  • 0.333 cucumber
  • 200 g low-fat cream cheese
  • 1 pack watercress
  • 4 iceberg lettuce leaves
  • Salt
  • Pepper
  • 2 tbsp clarified butter

Instructions

  1. 1.

Pat the chicken cutlets lightly, season with salt and pepper, then dust both sides with flour.

  2. 2.

Beat the egg in a shallow dish; coat each cutlet in the beaten egg. Place breadcrumbs in another shallow dish and dredge the cutlets, pressing the crumbs onto the surface.

  3. 3.

Heat clarified butter in a pan over high heat and fry the cutlets until golden brown on both sides. Drain on paper towels.

  4. 4.

Slice the buns open, spread the bottom generously with cream cheese, add watercress and an iceberg lettuce leaf. Peel the cucumber and slice it thinly. Place one chicken cutlet on each bun base, top with cucumber slices, then cover with the bun tops.

  5. 5.

Optionally garnish the cucumber slices with a little extra watercress before serving.
