Chicken Breasts with Spinach Filling

- 500 g spinach
- 4 chicken breast fillets
- Salt
- Pepper (freshly ground)
- nutmeg
- 1 ball mozzarella
- 2 Eggs
- 4 Tbsp breadcrumbs
- 4 tbsp flour
- 3 tbsp clarified butter
Instructions

Wash the spinach, discard stems and blanch in a pot with a little boiling water until wilted; remove, shock in cold water, drain, squeeze out excess moisture, and roughly chop.

Peel the chicken breasts, cut a pocket lengthwise, and season with salt and pepper.

Dice the mozzarella and mix into the spinach, seasoning with salt, pepper, and nutmeg.

Fill each pocket with some of the mixture and secure with toothpicks.

Beat the eggs in a shallow dish; spread flour and breadcrumbs on separate dishes.

Coat each stuffed breast first in flour, then dip in egg, and finally roll in breadcrumbs. Fry in plenty of hot clarified butter over medium heat for about 10 minutes until golden brown all around.
