Ground Meatballs with Tomato, Pita Bread and Tzatziki

Ingredients

  • 3 cloves garlic
  • 200 g cucumber salad
  • 250 g low-fat quark
  • 250 g plain yogurt
  • 1 tsp freshly chopped dill
  • Salt
  • pepper (ground)
  • 1 splash Lemon juice
  • 1 Shallot
  • 1 tbsp Olive Oil
  • 1 old-fashioned roll
  • 600 g mixed ground meat
  • 1 egg
  • 1 tsp medium-hot mustard
  • 20 g clarified butter
  • 1 apple
  • 6 tomatoes
  • 150 g Feta
  • 2 tbsp freshly chopped parsley
  • flatbread (optional)

Instructions

    For the tzatziki, peel and finely chop 2 cloves of garlic. Wash the cucumber, optionally peel it, cut lengthwise in half, remove seeds and grate finely. Mix quark with yogurt, add garlic, dill, cucumber, salt, pepper and lemon juice; cover and refrigerate.

    Peel and finely chop the shallot and remaining garlic; sauté in a pan with 1 tbsp hot oil until translucent. Remove from heat and cool. Soak the roll in lukewarm water. Knead ground meat with the shallot mixture, egg, mustard and well‑pressed bread crumbs; season with salt and pepper.

    Form small balls from the meat mixture and fry them in a pan with hot clarified butter until golden brown on all sides. While cooking, wash the apple, quarter it, remove seeds and slice into thin strips; add to the meatballs and sauté briefly.

    Wash tomatoes, cut off stems and slice into wedges. Crumble feta. Arrange meatballs with apple slices, tzatziki and tomato wedges on a plate; sprinkle with parsley and feta. Serve with flatbread if desired.
