Grilled Radicchio

It doesn't always have to be meat: Grilled Radicchio is a great summer dish from Spoonsparrow!

Ingredients
- 300 g Gorgonzola
- 200 g Sour Cream
- 1 tbsp Lemon Juice
- Salt
- Pepper (freshly ground)
- 2 tbsp chopped parsley
- 4 large sturdy heads of radicchio
- 12 tbsp olive oil
Instructions

Mix Gorgonzola, sour cream and lemon juice with an immersion blender. Stir in salt, pepper and parsley.

Wash, trim, pat dry the radicchio and cut each head lengthwise into halves.

Combine olive oil with salt and pepper to make a dressing.

Brush the radicchio on the outside and between leaves with the oil mixture; grill each side about 4 minutes on a not-too-hot grill, occasionally pressing with tongs against the grates. Serve the grilled radicchio topped with the Gorgonzola cream.
