Ingredients

  • 250 g red lentils
  • 500 ml broth
  • 1 bunch spring onions
  • 2 tbsp butter
  • 4 chicken breast fillets
  • Salt
  • Pepper (freshly ground)
  • 2 tbsp clarified butter
  • 1 tbsp balsamic vinegar
  • coriander leaves

Instructions

    Wash the red lentils in a sieve under running water and cook them in the broth for about 7 minutes. Clean, wash and slice the spring onions into thin rings. Sauté the spring onions in hot butter for about 3 minutes.

    Season the chicken breast fillets with salt and pepper and fry them in hot clarified butter for 8-10 minutes, turning occasionally.

    Drain the lentils and let them dry slightly, reserving the broth. Add the lentils and half of the broth to the sautéed spring onions. Season with balsamic vinegar, salt, and pepper, tasting as you go. Wash the coriander, shake it dry, pick off the leaves and add them to the red lentils.
