Chicken Breast with Mango

Ingredients
- 4 tbsp soy sauce
- 3 tsp Honey
- 4 chicken breast fillets (200 g each)
- 1 tbsp Sesame seeds
- 0.5 bunch coriander leaves
- 1 tsp freshly grated ginger
- 1 red chili pepper
- 3 tbsp white wine vinegar
- 5 tbsp walnut oil
- Salt
- pepper (ground)
- 1 ripe Mango

Whisk soy sauce with 2 tsp honey and marinate the chicken for about 1 hour. Toast sesame seeds in a dry pan.

Rinse coriander, shake dry. Set aside some leaves for garnish, roughly chop the rest. Slice chili lengthwise, deseed, wash and finely chop. Mix coriander, ginger, remaining honey, chili, vinegar, salt, pepper, and 3 tbsp oil into a salad dressing.

Remove chicken from the marinade, pat dry, season with salt and pepper, and sear in the remaining oil for 2-3 minutes on each side. Add the marinade and reduce to a syrupy consistency over about 2-3 minutes. Remove chicken and let cool.

Peel mango and cut flesh into thin strips away from the stone. Slice cooked chicken diagonally into thin slices.

Arrange chicken and mango strips decoratively on plates, drizzle with salad sauce, sprinkle sesame seeds, and garnish with coriander leaves.
