Meatloaf with Cream Sauce

Ingredients
- 800 g mixed ground beef
- 200 g sheep cheese
- 1 onion
- 20 g butter
- 1 stale roll
- 1 egg
- 2 tbsp Tomato paste
- 1 tsp Mustard
- 3 bunches parsley
- 400 ml meat stock (from a jar)
- 200 g whipping cream
- Salt
- ground pepper
Instructions

Soak the roll in water. Peel and finely chop the onion, then sauté it in butter until translucent.

In a bowl combine ground beef with onion, squeezed-out roll, egg, tomato paste, mustard, and seasonings; knead well. Wash, pat dry, and finely chop parsley; set aside 1/3 for sprinkling.

Dice sheep cheese into small cubes, add to the meat mixture along with remaining parsley, mix, and shape into a loaf. Place the loaf in a greased roasting pan and bake at 180°C for 60 minutes.

Remove from oven, keep warm, and deglaze the pan with stock; add cream, reduce by one-third, season, strain through a sieve, and serve over the meatloaf, sprinkled with parsley.
