Ingredients

  • 4 chicken breast fillets
  • Salt
  • Pepper (freshly ground)
  • 1 tbsp oil
  • 1 tsp butter
  • 4 Sage leaves
  • 1 lemon slice
  • juice of 1 lemon
  • 2 tsp grated lemon zest
  • 2 egg yolks
  • 125 g butter
  • 150 g Sour cream
  • 8 sage leaves
  • Salt
  • Pepper (freshly ground)

Instructions

    For the lemon sauce whisk the lemon juice with the egg yolks in a double boiler using the paddle attachment of an immersion blender until frothy. Gradually fold in the liquid butter until the sauce is creamy. Season with salt and pepper. Wash the sage leaves, finely chop them and mix into the sauce. Refine the sauce with sour cream and keep warm.

    Rub the chicken fillets with salt and pepper and brown them in butter and oil, turning occasionally for about 8 minutes.

    Plate the sauce over the fillets and garnish with sage and lemon slices.
