- 4 chicken thighs
- Salt
- pepper (ground)
- 6 shallots
- 2 Garlic cloves
- 350 g mixed forest mushrooms (e.g., chanterelles, wood blewit, button mushrooms)
- 2 tbsp olive oil
- 4 thyme sprigs
- 150 ml dry white wine
- 200 ml poultry stock
- 1 tbsp cold butter

Preheat the oven to 180°C fan.

Wash and pat dry the chicken thighs; season with salt and pepper. Peel the shallots and garlic, clean the mushrooms thoroughly, and cut them smaller if desired. Heat the oil in a large Dutch oven and sear the chicken thighs briefly. Wash the thyme and pluck the leaves from two stems. Add the remaining thyme to the chicken, then add the shallots, garlic cloves, and mushrooms; pour in wine and stock. Cover and simmer for 25-30 minutes. Remove the pot from the oven, season the sauce with salt and pepper, and finish with cold butter. Plate on a platter or individual plates and serve with fresh ciabatta if desired.
