Ingredients

  • 4 chicken breast fillets
  • 1 Tbsp clarified butter
  • 350 g lingonberries (washed and drained)
  • 1 shallot (cut lengthwise into strips)
  • 250 ml pineapple juice
  • 1 tsp ginger (fresh grated)
  • 1 green peppercorn (pitted, sliced thinly)
  • 1 tbsp butter
  • 1 tbsp sugar
  • 2 slices pineapple (canned or fresh, cut into small pieces)
  • Salt
  • pepper (ground)
  • mint (for garnish)

Instructions

    Simmer pineapple juice and half the lingonberries for about 10 minutes in a small pot, puree and strain through a sieve.

    Sauté shallot strips, ginger, and peppercorn slices in butter; add remaining lingonberries and the lingonberry puree, simmer for about 5 minutes, then add pineapple pieces and heat. Season sauce with salt, pepper, and sugar.
