Ingredients
- 4 chicken breast fillets
- 1 Tbsp clarified butter
- 350 g lingonberries (washed and drained)
- 1 shallot (cut lengthwise into strips)
- 250 ml pineapple juice
- 1 tsp ginger (fresh grated)
- 1 green peppercorn (pitted, sliced thinly)
- 1 tbsp butter
- 1 tbsp sugar
- 2 slices pineapple (canned or fresh, cut into small pieces)
- Salt
- pepper (ground)

Instructions

Simmer pineapple juice and half the lingonberries for about 10 minutes in a small pot, puree and strain through a sieve.

Sauté shallot strips, ginger, and peppercorn slices in butter; add remaining lingonberries and the lingonberry puree, simmer for about 5 minutes, then add pineapple pieces and heat. Season sauce with salt, pepper, and sugar.
