Ingredients

  • 4 chicken breast fillets
  • Salt
  • Pepper (freshly ground)
  • 1 Tbsp clarified butter
  • 4 stalks thin young leeks
  • 500 g tart apples (red and green)
  • Lemon juice
  • 50 g cranberries (or lingonberries or raisins)
  • oil (for the baking dish)
  • sage leaf (for garnish)
  • 400 g couscous
  • 400 ml water
  • Salt

Instructions

    Add boiling salted water to the couscous and let it swell for 5 minutes. Fluff with a fork and set aside warm.

    Rub chicken breast fillets with salt and pepper.

    Wash apples, quarter them, remove cores and cut into wedges, immediately drizzle with lemon juice.

    Wash leeks, trim, and cut white and light green parts into about 4 cm pieces.

    Preheat oven to 180°C and place an oiled baking dish in the oven.

    Sear chicken breast fillets in hot clarified butter in a pan on one side briefly and sharply, then place them skin-side up in the heated baking dish. Arrange apple wedges, leek pieces, and cranberries around, season with pepper, and bake in the preheated oven for about 10 minutes.

    Remove from oven, slice chicken breast diagonally, arrange over apple-leek mixture with couscous, garnish with sage leaves, and serve.
