- 4 chicken breast fillets (about 160 g)
- Salt
- Pepper (freshly ground)
- 2 bulbs fennel (about 130 g each)
- 2 tbsp plant oil
- 125 ml dry white wine
- 5 tbsp orange juice
- 2 tbsp coarse mustard
- sugar

Preheat the oven to 200°C with top and bottom heat.

Wash, pat dry, salt, and pepper the chicken breasts. Clean and quarter the fennel bulbs, setting aside the fennel fronds. Heat oil in a roasting pan and brown the chicken on both sides. Deglaze with white wine and orange juice, stir in mustard and a pinch of sugar, then add the fennel. Roast in the oven for 15-20 minutes, turning once or twice. Remove and serve garnished with fennel fronds.
