Ingredients
- 100 g Dried Apricots
- 4 sprigs thyme
- 150 g long grain rice
- 250 ml Knorr chicken stock
- 250 ml Rama Cremefine (7% fat)
- Salt
- Pepper
- Cayenne pepper
- 3 chicken breast fillets
- 1 tbsp oil
- 2 tbsp balsamic vinegar

Coarsely dice apricots. Wash thyme, pat dry and remove leaves.

Place uncooked rice in a large baking dish, spread apricot pieces on top. Stir hot stock, Cremefine, and thyme together. Season with salt, pepper, and cayenne pepper, then pour over rice and apricots. Bake in preheated oven at 200 °C (175 °C fan) for about 20 minutes to partially cook.

Season chicken breast fillets with salt and pepper, then sear them all sides in a non‑stick grill pan with hot oil. Drizzle balsamic vinegar, place the chicken on top of the rice, and bake for another 20 minutes until cooked through.
