Ingredients

  • 1 Aubergine
  • Salz
  • 1 Zucchini
  • 1 yellow bell pepper
  • 1 red bell pepper
  • 4 chicken breast cutlets (180 g each)
  • 2 tbsp chopped garden herbs (Z, B, rosemary, parsley, basil,…)
  • 2 tbsp olive oil
  • 1 tsp lemon juice
  • 1 tsp Honey
  • 4 tbsp herb butter (for serving)
  • rosemary (for garnish)

    Preheat the grill.

    Wash the aubergine, cut it lengthwise in half and slice into rounds. Lightly salt and let sit for 10 minutes. Wash the zucchini, also cut lengthwise in half and slice. Wash the peppers, halve, seed, remove membranes, and cut into strips.

    Place the chicken cutlets in a bowl, add herbs, oil, lemon juice, and honey, mix well. Grill the cutlets together with the vegetables on the hot grill for 7-10 minutes until cooked through.

    Arrange on preheated plates, top the meat pieces with herb butter and garnish with rosemary before serving.
