Ingredients

  • 4 Chicken breast fillets (100 g each)
  • Salt
  • freshly ground pepper
  • a little flour
  • 2 eggs (medium size)
  • 50 g breadcrumbs
  • 50 g chopped pistachios
  • 6 tbsp oil (for frying)

Instructions

    Rub the chicken breast fillets with salt and pepper. Dust them with flour. Beat the eggs in a shallow dish, seasoning each with a pinch of salt and pepper. Mix the breadcrumbs and pistachios in another shallow dish.

    Coat each chicken breast fillet first in the beaten eggs, then in the breadcrumb-pistachio mixture.

    Heat oil in a large non‑stick pan. Fry the chicken breast fillets around 12 minutes until golden brown. Drain briefly on kitchen paper.
