Ingredients

  • 300 g fresh Brussels sprouts
  • Salz
  • 500 g chicken breast fillet (pre‑cooked)
  • 2 ripe apples (e.g., Boskop)
  • 1 EL lemon juice
  • 2 shallots
  • 4 sprigs thyme
  • 2 EL olive oil
  • Pfeffer (ground)
  • 150 ml Vegetable broth
  • 200 g goat cheese (block)

    Clean, wash the Brussels sprouts and cook in boiling salted water for 10‑12 minutes until al dente. Drain, shock in cold water and let drain well. Wash the chicken, pat dry and slice into thin strips. Wash the apples, quarter them, remove cores, cut into narrow slivers and immediately drizzle with lemon juice. Rinse thyme and shake dry. Peel shallots and slice thinly.

    Heat oil in a pan and sear the chicken on all sides until golden. Add Brussels sprouts, shallots, and apples; sauté briefly. Stir in thyme and season with salt and pepper. Deglaze with broth and simmer over medium heat for about 5 minutes. Slice goat cheese into rounds, spread over the chicken‑vegetable mixture, and place under a preheated oven grill. Bake for ~5 minutes until gratinated, then remove and serve sprinkled with freshly ground pepper.
