Ground Meatballs with Tomato Sauce

Ingredients
- 1 slice toast bread
- 1 egg
- 500 g ground meat (mixed)
- 2 tbsp freshly chopped parsley
- Salt
- pepper (ground)
- olive oil (for frying)
- 1 onion
- 2 tbsp olive oil
- 1 tbsp Tomato Paste
- 800 g diced tomatoes (canned)
- Salt

- 100 g black olives (pitted)
- 1 stalk oregano

Soak the toast bread in lukewarm water. Add the egg to the ground meat. Tear out the drained toast bread, add it and the parsley, season with salt and pepper. Knead the mixture thoroughly and shape into small balls with lightly damp hands.

Once all are formed, heat a non-stick pan with some oil and place the meatballs in it. Turn them with a spatula or by swirling to brown evenly. Remove the balls and set aside while you prepare the tomato sauce.

Peel and finely dice the onion; sauté in hot oil until translucent. Stir in the tomato paste. Add the diced tomatoes and let the sauce simmer gently for about 10 minutes, becoming slightly thick. Season with salt and pepper. Finish with olives and chopped oregano leaves. Return the meatballs to the sauce and cook together for a few more minutes before serving.
