Chicken Bowl with Feelgood Chickpeas, Quinoa & Veggies

Spoonsparrow and reis-fit present: Chicken bowl with reis-fit Feelgood chickpeas with quinoa & veggies – try it quickly now!

Ingredients

  • 100 g chicken breast fillet
  • 2 tsp Rapeseed Oil
  • iodized salt (with fluoride)
  • Pepper
  • paprika powder
  • 1 handful blueberries (30 g)
  • 1 tbsp cashew nuts (10 g)
  • 50 g feta cheese (45% fat in whole milk)
  • 1 sprig parsley
  • 1 pack of reis-fit Feelgood (chickpeas with quinoa & veggies)

Instructions

  1. 1.

    Rinse the chicken breast, pat dry and cut into strips. Heat oil in a pan and sauté the chicken strips over medium heat for 5–7 minutes. Season with salt, pepper and paprika, remove from the pan and set aside.

    Meanwhile rinse blueberries, wash and pat dry. In another pan toast cashew nuts over low heat for about 4 minutes without added fat. Crumble feta. Wash parsley, shake dry and finely chop.

    Squeeze the reis-fit Feelgood pack gently, open it, add the contents to the pan and warm with 2 tbsp water over low heat for 2 minutes.

    Place the reis-fit Feelgood chickpeas, quinoa & veggies in a bowl, arrange chicken strips, cashew nuts, blueberries and feta on top. Sprinkle parsley over the dish.
