Ingredients

  • 700 g sugar
  • 1 tbsp Lemon Juice
  • 25 g citric acid (from pharmacy)
  • 700 g cherries
  • 0.5 cinnamon stick

Instructions

    Bring 700 ml water to a boil with the sugar and simmer for about 5 minutes.

    Remove from heat, stir in the lemon juice and citric acid until dissolved. Wash, pit, and add the cherries to the syrup; gently mash them with a potato masher.

    Add the cinnamon stick and let steep for 1–2 hours. Strain through a fine sieve, briefly re‑boil, then immediately pour into sterilized bottles. Seal tightly and allow the bottles to cool.
