Cherry Cake with Chocolate Crumbs

Ingredients
- 350 g soft butter
- 150 g raw cane sugar
- 5 eggs
- a pinch of salt
- 500 g whole wheat flour
- 1 tsp Baking powder
- 100 ml milk (1.5% fat)
- 750 g sour cherries
- 50 g ground almonds
- 2 tbsp cocoa powder
- 1 tbsp powdered sugar (from raw cane sugar)

Beat 250 g butter with a hand mixer until fluffy. Add alternating portions of 100 g sugar and eggs, stirring in the salt. Mix 400 g flour with baking powder and gradually fold into the butter mixture with milk to create a smooth, spreadable dough. Spread dough on a parchment-lined baking sheet and level it out.

Wash cherries, rinse thoroughly in a sieve, and pit them. Distribute over the dough. For the crumbs, mix remaining flour with ground almonds, cocoa powder, and remaining sugar. Add small pieces of butter, then crumble between your hands until crumbly, forming the topping.

Sprinkle crumbs over the cherries and bake in a preheated oven at 180 °C (160 °C fan‑forced; gas: level 2–3) for about 40–45 minutes (test with a skewer). Remove, let cool, cut into pieces, dust with powdered sugar, and serve.
