Apple Streusel Cake

Ingredients

  • 350 g flour
  • 120 g sugar
  • a pinch of salt
  • 1 egg
  • 200 g butter
  • flour (for dusting)
  • 600 g apples
  • 60 ml dry white wine
  • 0.5 cinnamon stick
  • 1 star anise
  • 2 cloves
  • 2 tbsp sugar
  • 0.5 untreated lemon (juice)
  • butter (for the pan)

Instructions

    Mix flour, sugar and salt; sift onto a floured surface, create a well in the center, crack the egg into it and scatter butter chunks around the well. With your hands quickly knead all ingredients into a smooth dough, shape into a ball, wrap in cling film and refrigerate for 30 minutes.

    Preheat the oven to 180 °C (convection).

    Peel, quarter and core the apples; cut them into thin slivers. Dice 150 g of the apples into small cubes and combine with wine, sugar and spices in a pot. Bring to a boil over medium heat and simmer for about 5 minutes until softened. Remove the spices and puree the apple mixture. Mix in the remaining apple slivers and lemon juice; let cool.

    Roll half of the dough on a floured surface to fit the size of the greased pan, line the bottom with it. Spread the cooled apple filling over the base. Rub the remaining dough between your palms to form crumb-like pieces and sprinkle them over the filling. Bake in the preheated oven for about 40 minutes until golden brown. Remove, cool, lift out of the pan and cut into servings.
