Ingredients

  • 300 g butter cookies
  • 80 g liquid butter
  • 7 ripe peaches
  • 10 sheets white gelatin
  • 300 g Low-fat quark
  • 200 g cream cheese (pure)
  • 1 tbsp vanilla syrup
  • 200 ml whipping cream (at least 30% fat content)
  • 1 tbsp powdered sugar
  • 230 ml apple juice
  • 2 Tbsp grenadine
  • 1 packet red tart glaze

Instructions

    Place the cookies in a freezer bag and roll them several times with a rolling pin. Mix the cookie crumbs with the butter and line the bottom of a springform pan lined with parchment paper with this mixture. Chill in the refrigerator. In the meantime, wash the peaches, blanch them, cool them under cold water, peel, halve, pit, and cut into thin slivers. Soak the gelatin in cold water.

    Whisk the quark with the cream cheese and syrup. Beat the whipping cream with powdered sugar until stiff peaks form and gradually fold it into the quark mixture. Dissolve the gelatin in a pot over low heat, add 2 tbsp of the quark cream, stir, and blend with the remaining cream to smooth consistency. Spread half of the peach slivers on the cookie base and pour the quark mixture over them. Smooth the surface and chill in the refrigerator for at least 2 hours.

    Mix the juice with syrup and tart glaze and bring to a boil in a pot. Distribute the remaining peach slivers over the cake and pour the glaze over them. Chill again in the refrigerator for another 1-2 hours. Carefully remove the finished cake from the springform pan, cut into pieces, and serve.
