Cheese Zucchini Muffins
Hearty little cakes for zucchini and cheese lovers!
Ingredients
- 1 Zucchini
- 1 handful basil
- 200 g Flour
- 2 tbsp baking powder
- 200 g grated cheese (e.g. Emmental)
- pepper (ground)
- Salt
- 180 ml milk
- 3 eggs
- 50 g melted butter
- 1 Red Onion
- 40 g pine nuts

Preheat the oven to 180°C (356°F) with fan and top heat. Line a muffin tin with paper cups.

Wash, peel, and grate the zucchini coarsely. Rinse the basil, shake dry, pick off leaves and chop finely. Mix flour with baking powder and about 125 g of cheese. Season with pepper and a pinch of salt. In a bowl whisk milk, eggs and butter together; pour into the flour mixture and stir until just combined. Fold in grated zucchini and chopped basil, then spoon batter into cups. Peel and dice the onion finely. Roughly chop pine nuts and mix with remaining cheese. Spread this topping over each muffin. Bake for about 30 minutes or until golden brown (test with a toothpick).

Remove from oven, let cool briefly, lift out of tin and set on a wire rack to cool completely.
