Cheese tortilla with spring onions is a recipe featuring fresh ingredients from the fruit-vegetable category.

Ingredients

  • 4 Spring Onions
  • 1 red chili pepper
  • 1 Garlic clove
  • 1 tbsp Olive Oil
  • 8 soft flour tortillas
  • 300 g grated Manchego (or Emmental, Gouda)

Instructions

    Wash and trim the spring onions, then slice into fine rings. Rinse the chili, deseed, and dice finely. Peel and mince the garlic.

    Heat a large skillet with a little oil and place one tortilla in it. Sprinkle 1/4 of the cheese, spring onions, garlic, and chili on top, then lay another tortilla over it. Cook briefly until the tortilla turns golden brown and the cheese begins to melt. Flip and finish cooking on the other side.

    Prepare the remaining quesadillas in the same manner. Keep finished tortillas warm in an oven at 80°C (fan) if desired.

    Serve with guacamole or tomato salsa.
