Fried Lentil Balls with Peanut Sauce

Ingredients
- 250 g red lentils
- 200 ml vegetable broth
- 1 egg
- 1 Spring onion
- 1 Garlic clove
- 0.5 bunch parsley (chopped)
- 0.5 bunch coriander leaves (chopped)
- breadcrumbs (as needed)
- ground cumin
- Salt
- Cayenne pepper
- oil for frying

- 1 tbsp peanut oil
- 3 tbsp peanut butter (with pieces)
- 200 ml coconut milk
- Cayenne pepper
- soy sauce

Bring broth to a boil, add lentils and simmer covered for about 15 minutes until tender. The liquid should be fully absorbed; if not, add more liquid as needed. Remove from heat and let cool to lukewarm.

Wash, trim, and finely chop the spring onions.

Peel and finely mince the garlic. In a blender combine lentils, spring onions, garlic, herbs, and egg; blend until smooth. Mix in breadcrumbs until a moldable dough forms. Season with cumin, salt, and cayenne pepper, then shape into balls. Fry portions in hot oil for 1–2 minutes each side until golden brown.

For the dip, sauté minced garlic in hot oil, stir in peanut butter and cook briefly. Deglaze with coconut milk and bring to a boil. Reduce to desired consistency. Season with cayenne pepper and soy sauce, then transfer to a serving bowl.

Drain fried balls on paper towels, then serve with the peanut sauce.
