Potato Apple Onion Pancakes with Chives Cream

Ingredients
- 1 kg starchy potatoes
- 2 onions
- 1 apple
- 1 tbsp Lemon Juice
- 3 eggs
- 5 tbsp flour
- Salt
- Pepper (freshly ground)
- nutmeg
- 125 ml germ oil
- 250 g sour cream
- 100 g whipping cream
- 2 bunches chives
- Salt
- Pepper (freshly ground)
Instructions

In a bowl whisk the sour cream until half‑firm and fold in the chopped chives. Season with salt and pepper.

Wash, peel, and grate the potatoes finely. Drain briefly on a sieve and let sit to allow starch to settle. Peel and grate the onions. Core and quarter the apple, grate the flesh, and mix with lemon juice. Combine the potato, onion, apple mixture, and settled starch.

Whisk in eggs and flour, seasoning with salt, pepper, and nutmeg.

Heat oil in a pan and drop spoonfuls of batter into the hot fat, flatten slightly, and fry until golden brown on both sides. Add more oil if needed.
