Cheese Tortilla Flakes from the Microwave

Ingredients
- 200 g Gouda
- 2 sprigs coriander leaves
- 4 Spring Onions
- 4 red bell pepper strips
- 1 red chili pepper
- 8 tortilla flakes
- Salt
- black pepper (freshly ground)
- ground cumin
Instructions

Grate the Gouda. Rinse the coriander, shake dry and chop the leaves.

Wash, trim and slice the spring onions into fine rings. Set aside 2-3 tablespoons of green onion rings for garnish.

Wash, trim and cut the bell peppers into thin strips. Wash, deseed and finely chop the chili pepper.

Lay four tortilla flakes on a work surface and sprinkle with half of the cheese. Scatter the coriander leaves, spring onions, bell pepper strips and chili over them. Season with salt, pepper and cumin.

Sprinkle the remaining cheese on top and place the remaining tortilla flakes on top, pressing down. Cook each quesadilla individually in the microwave.

Place on a plate and cook at high heat (about 800 watts) for about 2 minutes until the cheese is melted. Remove, cut into pieces and immediately serve sprinkled with the remaining spring onions.
