Bean Shrimp Patties

Ingredients

  • 500 g black beans
  • 2 cm ginger
  • 1 Garlic clove
  • 1 onion
  • 2 tbsp plant oil
  • 50 g flour
  • Salt
  • Pepper
  • 200 g small peeled shrimp
  • palm oil (for frying)

Instructions

    Soak the beans overnight in plenty of cold water. The next day drain and cook in fresh water for about 1 hour.

    Peel the ginger and garlic. Grate the ginger finely, squeeze out the garlic. Peel the onion and dice it finely. Rinse the shrimp and let them dry.

    Heat the oil in a pan, sauté the onions, garlic, and ginger until translucent, then remove from heat.

    Drain the beans and let them cool. Remove the skins, then rub the beans together. Blend the beans with the onion mixture in a blender until smooth, fold in the flour, and season well with salt and pepper. Add the shrimp and mix.

    Preheat the oven to 80°C (Oven + fan).

    Heat palm fat in a wide pot (it’s hot enough when small bubbles rise on a spoon placed inside). Shape small discs from the bean batter and fry them in the hot fat, about 2-3 minutes per side. Drain the finished discs briefly on kitchen paper, then keep warm in the oven.
