Cheese Spätzle Basic Recipe

Ingredients
- Salt
- 400 g spelt flour
- 4 eggs
- nutmeg
- 200 ml milk
- 4 tbsp butter
- 200 g freshly grated Gruyère cheese (42% fat in solids)
- 2 onions
- 2 tbsp chives

Preheat the oven to 150 °C (convection 130 °C; gas: level 1–2). In a large pot bring plenty of salted water to a boil. Quickly mix spelt flour, eggs, nutmeg, milk and a pinch of salt in a bowl into a firm dough.

Immediately scrape the spätzle dough into the boiling salted water with a spätzle scraper or the back of a large knife; lightly wet the board before scraping. The spätzle are cooked when they rise to the surface and stay there for several minutes.

Remove the spätzle with a slotted spoon, drain, and toss them in a pan over low heat with melted butter. Layer alternatingly with grated cheese into a baking dish, cover, and place in the preheated oven until the cheese melts.

Meanwhile peel the onions and cut them into thin rings. Roast them golden brown in a pan over medium heat with butter. Serve the cheese spätzle on warmed plates topped with the caramelized onions and chives.
