Matjes on Apple-Onion Vegetables

This dish delivers heart‑healthy fatty acids along with plenty of vitamin D and iodine.
Ingredients
- 50 g onions (1 onion)
- 1 stalk marjoram
- 2 tsp yogurt butter
- 150 g small red apples (1 small red apple)
- 150 g matjes fillets (2 matjes fillets)
- black pepper
- 1 tbsp unsweetened lingonberries (jar)
- 1 rye roll
Instructions

Peel the onion, halve it and slice into very thin rings. Wash the marjoram, shake off excess moisture and remove the leaves.

Heat the butter in a pan. Sauté the onions, stirring occasionally, for 2 minutes.

Meanwhile wash the apple, dry it, quarter it and core it. Slice the quarters into thin strips.

Add the apples and marjoram to the onions and cook together another 2–3 minutes until the apples are lightly browned.

Quickly rinse the matjes fillets and pat them dry with kitchen paper.

Season the apple‑onion mixture with pepper. Arrange the matjes on top of the vegetables, scatter the lingonberries over it, and serve with the rye roll.
