Ingredients
- 400 g mixed cheese (e.g., Gouda, Emmental, Bergkäse)
- 2 Apples
- 1 Shallot
- 4 pickles
- 100 g yogurt
- 1 tbsp White Wine Vinegar
- 1 tsp sharp mustard
- Lemon juice
- a pinch of sugar
- Salt
- white pepper (from the mill)
- chives sprigs (for garnish)
Instructions

If necessary, drain and cube the cheese. Wash the apples (peel if desired), quarter, core, and also dice them small. Peel and finely dice the shallot. Cut the pickles into small pieces and whisk 1-2 tbsp pickle water with the yogurt, vinegar, and mustard. Mix all prepared ingredients together and season with lemon juice, sugar, salt, and pepper.
