Cheese Pastry

Ingredients
- 2 tbsp yogurt
- 1 tsp Baking Soda
- 300 g sheep cheese
- 4 eggs
- 250 g quark
- 1 tsp salt
- 2 packs strudel dough (ca. 450 g)
- 125 g liquid butter
- liquid butter (for the pan)
- 1 egg yolk

Preheat the oven to 180°C (350°F) with top and bottom heat.

Mix the yogurt with the baking soda. Crumble the cheese into a small bowl and mash it with a fork. Whisk the eggs until frothy. Then add the well-drained quark, sheep cheese, salt, and yogurt mixture and combine well.

Grease a springform pan with butter. Roll out the strudel dough and brush each sheet with some butter. Spread about 3 tbsp of the cheese filling on each sheet and roll from the long side. Continue until all sheets are used. Arrange the rolls in a circle in the pan. Whisk the egg yolk with 2 tbsp water and brush the pastry with it. Bake in the preheated oven for 35-40 minutes until golden brown.
