Ingredients
- 1 stalk leek
- 1 clove garlic
- 2 tbsp Rapeseed oil
- 300 g mixed minced meat
- Salt
- Pepper
- nutmeg
- 100 ml White wine
- 500 ml vegetable broth
- 120 g grated mozzarella
- 50 g finely grated parmesan cheese
- 2 sprigs oregano (for garnish)

Clean, wash and slice the leek into thin strips. Peel and finely chop the garlic. Sauté two-thirds of the leek and the garlic in oil, add the minced meat and fry, breaking it up into crumbles repeatedly. Season with salt, pepper and nutmeg, deglaze with wine, pour in broth and simmer gently for 10 minutes.

Add the cheese and stir until melted. Do not let the soup boil further. Wash the oregano, shake dry and tear into small pieces. Taste and serve. Sprinkle the remaining leek and oregano over the Cheese Leek Soup.
