Ingredients

  • 150 g chanterelle mushrooms
  • 150 g button mushrooms
  • 1 onion
  • 0.5 bunch Parsley
  • 1 large baguette
  • 1 tbsp butter
  • Salt
  • Pepper (freshly ground)
  • 0.5 garlic clove
  • 400 g grated Gruyère cheese
  • 200 g grated Emmental cheese
  • 3 tsp starch
  • 300 ml dry white wine
  • 1 tsp lemon juice
  • Nutmeg (freshly grated)

Instructions

  1. 1.

Clean mushrooms and slice them. Peel the onion and dice finely. Wash parsley, shake dry and chop. Cut bread into cubes.

  2. 2.

Heat butter in a pan and sauté the onion until translucent. Add mushrooms and steam until their liquid evaporates. Mix in parsley, season with salt and pepper.

  3. 3.

Rub a fondue pot with garlic. Combine cheese and starch inside. Pour wine and lemon juice over it, stirring continuously until the cheese melts. Fold in mushrooms, season with pepper and nutmeg.

  4. 4.

Place the fondue on a hotplate. Skewer bread cubes onto fondue forks and dip them into the cheese-mushroom mixture. Fresh tomatoes pair well with this dish.
