Fried Scampi

Ingredients

  • 24 large scampi
  • juice of one lemon
  • 2 cloves garlic
  • 1 red pepper (deveined, finely chopped)
  • 4 tbsp olive oil
  • Salt
  • pepper (ground)
  • 6 sheets rice paper
  • 1 Egg white
  • oil for fryer
  • 3 tbsp mixed blanched vegetable cubes

Instructions

    Mix lemon juice, pressed garlic, oil, pepper, salt and pepper; fold in the scampi and let marinate in the refrigerator for a few hours.

    Prepare the deep fryer and heat to 180°C (356°F).

    Soak rice paper between damp kitchen towels, cut into four pieces each, brush edges with beaten egg white, wrap one scampi in each piece, and fry until golden brown.

    Arrange on plates and sprinkle with vegetable cubes as desired.
