Ingredients
- 4 medium tart apples
- Lemon juice
- 200 g French Brie (e.g., Valbrie)
- 3 eggs
- 3 tbsp heavy cream
- 3 tbsp milk
- salt (pepper, nutmeg)
- 1 tbsp sugar
- 2 tbsp white wine
- 1 tbsp butter

Cut a lid off the stem end of each apple and remove the core and some flesh. Brush the inside with lemon juice. Dice the flesh and drizzle with lemon juice.

Finely dice the cheese and mix it with the diced flesh, then fill the apples with this mixture.

Preheat oven to 180°C (356°F). Whisk eggs with cream and milk, season with salt, pepper, and nutmeg. Slowly pour over the filling in the apples. Dissolve sugar in wine and brush over the apples. Place in a buttered dish and bake for about 15 minutes.
